What is the glycemic index value of V8 vegetable juice?
I worry that because that is processed will be higher than just vegetables.
The glycemic index of vegetable juice is not really something that should concern us. V8 glycemic index is about 43, which means that it is quite low, and basically the same as the average vegetable. I really hoped it was a little higher because it doesn't contain all the plant fiber to make, but apparently not.
